Any ideas: 'paper fold' I think has a nice ring to it. Though I would name it with one of the most famous origami 'sculptures' like 'the crane', 'the red crane', 'the white crane'. Those could be interpreted as anything so if you mean a retail shop make sure to use pictures to convey the meaning; for instance the crane (folded model) could be your logo. I would suggest doing such with your website as well (if you have/will have one). 'Origami village', you could make a village out of paper to have at the centre of the store (a show piece) and that could be your selling point. Hope I helped, good luck! :)
